¿Sabías que el olor de la comida poco saludable y ricas en calorías puede alentar a una persona a consumirla?

Así lo ha comprobado la ciencia, pero esta condición cambia si el individuo se expone al olor por dos minutos o más… y aguanta sin caer en la tentación.

Un reciente estudio científico señala que el hecho de oler durante varios minutos los alimentos puede satisfacer directamente el deseo de comerlos, ya que el cerebro no se da cuenta de la diferencia en la fuente del placer sensorial (olfato y gusto).

Los investigadores llegaron a la conclusión de que es recomendable olfatear nuestros alimentos antes de ingerirlos, durante unos dos minutos o un poco más, lo que provocará que el cerebro se sienta satisfecho. Pero si por las prisas o por el hambre solo se pueden oler durante medio minuto o menos, la tentación de comerlos será más grande.

¿Funciona contra la obesidad?

Ahora que se conoce este “truco” científico, surge la pregunta: ¿se puede combatir la obesidad con el olor?

Veamos: para llegar a la conclusión del olor prolongado, el grupo de investigadores llevó a cabo una serie de experimentos, donde expusieron a estudiantes del comedor de una escuela secundaria a vaporizadores que emanaban por separado olores de alimentos saludables, como fresas y manzanas, y la comida poco saludable como pizza y galleta.

Fue así como encontraron un vínculo directo entre el tiempo de exposición y la satisfacción del antojo: los estudiantes que estuvieron expuestos al aroma de las galletas por menos de 30 segundos tuvieron más posibilidades de desear una. Sin embargo, cuando los participantes olfatearon las galletas por más de dos minutos, eligieron comer las fresas.

Los expertos concluyeron que oler fugazmente un alimento prepara a nuestro cerebro para saborearlo, en tanto que olfatearlo por más tiempo termina siendo tan satisfactorio como el hecho de haberlo comido.

Este hallazgo sugiere entonces que los fabricantes de productos para aromatizar el ambiente podrían desarrollar olores de alimentos para frenar los impulsos de las personas de consumir comida poco saludable, y a su vez, frenar la obesidad.

Ahora bien, entre las múltiples causas de la obesidad también se encuentra la ingesta de alimentos en exceso. La ciencia también tiene una explicación para esto.

Por qué comemos en exceso

Otro estudio plantea que la liberación de dopamina en el cerebro ―la hormona que produce la sensación de placer― tiene lugar dos veces durante una sesión de comida.

Científicos alemanes han explicado por qué la gente suele comer en exceso. El estudio señala que este hecho está relacionado con la liberación de dopamina en el cerebro, que cuando ocurre dos veces durante la ingesta de una comida propicia que el organismo consuma el doble de lo que necesita.

La doble liberación de dopamina se da la primera vez cuando los alimentos son ingeridos y la segunda cuando llegan al estómago. 

En la investigación participaron 12 voluntarios, algunos de los cuales recibieron una bebida sabrosa y otros una solución insípida. Al analizar los datos, los científicos establecieron que cuanto mayor era el deseo por la bebida sabrosa, menor cantidad de dopamina se liberaba cuando el alimento ya estaba en el estómago.  

Esto significa que la liberación de dopamina refleja nuestro deseo subjetivo de consumir un alimento. Pero también nuestro deseo parece suprimir la liberación de dopamina inducida por el intestino.

Por lo tanto, el estudio concluyó que la supresión de la liberación de dopamina inducida por el intestino podría causar que comamos en exceso los productos altamente deseados. Es decir, continuamos comiendo hasta que se libera suficiente dopamina.
